Description
Swiss Emmental is an Alpine cheese weighing between 75 and 120 kg, up to 27 cm in height and up to one metre in diameter. This unusual cheese can collect up to 1400 litres of cow's milk! It was born in the 13th century at high altitude: this was the ingenious way that farmers discovered to preserve the milk produced on mountain pastures. It is also famous for its holes, which can be as big as a walnut. These are due to fermentation: propionic fermentation releases carbon dioxide which, if not released, causes the cheese to swell. Apart from these unusual characteristics, it is a very tasty cheese made from raw milk and without any additives.
