Description
Belton Farm is an artisan farm that sources all its milk from a dedicated group of local dairy farmers who are committed to providing the highest standards of health, welfare and animal husbandry.
The cows are free-range and grass-fed, grazing outdoors for a minimum of 180 days and milked daily.
This Leicester uses a unique recipe that has been developed over many years. As the cheese is slowly aged, it takes on a "crispness", giving it a mouth-feel of firmness and depth of flavor that is hard to beat.
After 1945, cheesemakers began adding the natural colouring agent, annatto extract, found in the skins of the fruit of the annatto trees grown in South America and the Caribbean, to give the cheese a distinctive character after the war. The distinctive feature of this cheese is that it was developed in the original way, without the annatto extract.
Remove the cheese from the refrigerator 30 to 60 minutes before serving to allow it to develop its flavor.
